So, what exactly is suet? It’s the hard fat that surrounds the kidneys and loins of cows and sheep.
The fat is stripped away from the meat, then chopped and boiled. What’s left over once the water is separated is suet. Arctic explorers in the 19th and early 20th centuries mixed suet into their rations to provide energy for their extreme physical exertions. That’s the same reason birds, especially insectivores, thrive on suet. It’s pure soft energy to keep their high-performance engines revving (not to mention keeping them coming back to your yard!)
